Bringing in the New Year for 2014 was really amazing and one year I will never forget…one of my favorite memories was being around kind hearted people and people that love to cook. One of the recipes that stood out for me for this New Years was the pork loin that was made in a spicy marinade.
There was a pork loin that was prepared by Anthony who is an engineer by day and an amazing cook at night, every time he prepares something, it’s finger licking good. The pork loin that he made, to this day, stood out as he said it was simple using a spicy drizzle that he marinaded the meat with and then he BBQ’d the pork loin in a “Green Big Egg” which is a smoker as well as a bbq.
I kept thinking about this recipe and decided to give it a go. I made my spicy oil drizzle and used it as the marinade, I wrapped it in aluminum foil and baked the loin and it came out amazing! This is a super easy recipe, to prepare the drizzle, click here for that recipe.
Place your pork loin in a baggie and put your spicy drizzle in with it, let it marinade for 8 hours and overnight would be fine
Place aluminum foil in a baking dish and place your marinaded pork loin, don’t forget to add some of the marinade to the pork loin as it will keep your pork loin moist
Unwrap the foil
Place the meat on a cutting board
Slice and serve!
Again, this is a super easy recipe for pork loin that is great to serve when you are entertaining as it looks like a complicated meal to prepare trust me, it will taste even better than you imagined.
