I have not been baking lately as my oven has not been working…I was blessed with a new oven from my landlords and was itching to bake a cake. My friend Susan came over last week and was going on and on about a mandarin orange cake that she just loved, it had a pineapple, whipping cream “frosting”.
Susan and I do cooking classes together and have a sold out class coming up next week, we were going to try this cake for the class but the class is a “Cooking with Costco” cooking class. In looking over the ingredients for this mandarin orange cake, we just couldn’t figure out how to purchase the items from Costco to make a simple cake, maybe we will just use this recipe for our “Picnic with the Birds” class, who knows.
In the meantime I had to try the cake, I put the eggs and oil in a bowl and mixed it until it was well blended
I then added the cake mix and liquid from the mandarin oranges and blended until smooth
Finally I added the mandarin oranges
and mixed until it well blended (as you can see there are no chunks of the mandarin oranges)
I baked the cake until it was done and let it cool down. I then prepared the “frosting”. I put the pineapple (with the juice) and the vanilla pudding mix together and mixed it, then added the whipping cream
Added the whipped cream and blended for about 3-4 minutes
I topped my cake with the frosting

I really did like the cake, the best way to describe the mandarin orange cake is that it looked dense (almost like I did something wrong but Susan said that’s how it comes out) and yet it is airy, almost like a sponge cake. The frosting is very tropical tasting and I loved it. If you are looking for a super easy cake recipe, especially for the spring/summer…this is the perfect recipe.
