If you have ever eaten at my house, you would know that I tend to be a big “side dish kind of a girl” as I like variety and lots of choices and this recipe is a perfect side dish for any dinner. I will tell you that this is a super easy and delicious cole slaw recipe that is very healthy as there is no mayo.
Here is my all American cole slaw dish with a twist…what’s the twist in my cole slaw recipe? Well most cole slaw recipes are made with mayonnaise in it, some cole slaw recipes have shredded carrots and some add poppy seeds. While adding those ingredients can also make a great cole slaw recipe, I happen to think my recipe is far better and it’s much healthier as well. What’s different about mine, I make mine with vinegar. I know what you are thinking now, that I must love distilled vinegar as I use it in my famous pancake recipe (makes the best pancakes I promise) and I guess I’m learning that I really do like it over the red wine vinegar.
When I was working in the corporate kitchen we used to make most of our dressings using the distilled vinegar, being Italian, I was always used red wine vinegar. I’m learning that using distilled vinegar with a pinch of sugar really does take mild and tangy dressing.
So this is a super easy recipe that you can put together in minutes, you can add carrots if you would like and the poppy seeds, just no mayo 🙂
You mince your onions, sorry about the poor shot
then you shred your cabbage
you make your dressing, mix your cabbage and onions and poor your dressing on top and toss…and then you serve…how easy is that?
You can make this salad in advance and put it in the refrigerator and serve it later, even does well over night although if you are going to serve it to guests, try and serve it same day. We just love this recipe, the tangy vinegar with the simple cole slaw…YUM!!!! Would be great for picnics, Kelsi and I bring it to the beach as well. Please let me know what you think.
