It’s summer time and I’m finding cucumbers everywhere…fresh cucumbers are just so amazing and when in season, they are so sweet, juicy…yum!
It was 5 years ago, I took my family to Connecticut to meet my amazing aunts and cousins. It was such a memorable trip as my kids never even knew that they had so much family…a very Italian, very large, very loving family like mine that is. My zia (aunt in Italian) is an great cook, I just love watching her as she brings me back to my childhood by making simple and delicious recipes. This recipe for a cucumber salad is one of those recipes and it’s a perfect summer salad, refreshing and healthy and full of vinegar (surprise, surprise).
Since I’ve been home from that vacation, I make it all the time and now it brings back great memories for my kids as well. We have found that we like the cucumber sliced extra thin. You can cut it up in chunks or slice it to your likings, we also use a lot of red wine vinegar, actually we use more then most probably do and I would recommend making it to your likings. The recipe below is just to give you an idea of what to use, play with it and have fun!
We peel our cucumbers (although we don’t take off all of the skin as it looks lovely if you leave a little on) because the skins a little bitter and removing them will take away from the bitter
you slice or chunk your cucumbers…again we use the super thin cucumbers on the left
place all your cucumbers in a bowl after they are sliced
