I love my sister, she has always been there for me, all my life and I don’t know what I would do without her. She’s also an amazing cook, who shares her favorite recipes with me, including this recipe for baja chicken.
I can not vouch for where she found this recipe but…
- It’s a great recipe to make for guests as it can marinate overnight or you can marinate it for several hours
- It always comes out moist and delicious
- It’s healthy, has very little oil for the amount of chicken
- It is filled with lots of flavors
When I made this recipe I put it on a bed of lettuce, with blanched string beans, scallions and a light dressing. I kept the photos easy for this post as I really wanted the baja chicken to stand out and not a photo.
Measure out the seasonings (you can place them directly in a bag, I just wanted to show you the seasonings
Place chicken and oil in a bag with the seasonings
place the bag in the refrigerator for 4 hours or overnight. Put the grill on high and place chicken on grill, cook until done (my photo they were not cooked through)
Slice and serve or serve on a bed of lettuce or you can serve on a platter and make it a part of your main meal.

For those of you who look at the ingredient list and think it may not be worth it to make this dish because the recipe calls for so many ingredients…it’s a shame as the flavors are the perfect blend of flavors and I promise it is worth to try it once!
