If this doesn’t scream “fall” then I’m not sure what does!!! I never grew up eating pumpkin as it wasn’t Italian and I usually only ate Italian so pumpkin anything was not going to happen, even though my Nonna (grandma in Italian) Civita had a pumpkin recipe that was amazing!
I guess it was just us that didn’t eat pumpkin anything as my mother, who was an amazing cook, basically made all the comfort foods and rarely baked anything. And then came a recipe from work and everything changed!
A long time ago, like 25 years ago, I worked for Merrill Lynch in the Institutional Sales Division and someone brought in a pumpkin cake. From what I remember, I didn’t even taste the cake but everyone was raving about how amazing the flavor was, without skipping a beat I asked for the recipe. The girl, Lori I think her name was, wrote it on a piece of scratch paper and pumpkin was now being served in the Limatola household, even my mom liked this recipe. For some reason, I always miss something in the ingredients in making this…even in preparing this for my blog I forgot to add the sugar…good I caught it!
I have to say that I hadn’t and still don’t love pumpkin pie but I love this pumpkin pie cake, I love pumpkin cheesecake (hint hint) and I love pumpkin muffins too. This is such a simple recipe, it makes the house smell amazing and even non-pumpkin eaters will love it.
Basically you take your pumpkin and put it in a bowl (make sure to read the ingredient list)
I added my spices
and my eggs and then I mixed it all up (at this point put in your sugar, I forgot lol)
so I added my sugar since I forgot and mixed it again
put it in your prepared pan
cover your pumpkin with your cake mix (unmixed)
I drizzled my melted butter and pecans on top
I baked it…Oh my my house smells amazing!!!!
Here is my amazing pumpkin pie cake “slice of heaven” that even pumpkin haters will love.
This dessert is best served right out of the oven or warm. The flavors of the cloves with the sweetness of the sugar and butter is just amazing!!! I especially love this recipe in the fall, it’s a super easy recipe that can be brought to someones house as a pot luck. You can just reheat it, I’ve even put slices in the microwave (which I barely use) just so it’s piping hot!
