I love soup…you all already know that…last year I did a post on chicken taco soup from scratch, which to date is one of my favorite recipes.
Lately I keep thinking about a soup from many years ago, we were at a block party and a friend had made a taco soup that everyone was going crazy for, it was a simple taco soup with mostly canned items. I remember I too really enjoyed that soup but I never thought of getting the recipe and then I kind of forgot about it.
That chicken taco soup dish was always in the back of my mind. Recently a friend posted something on facebook with what appeared to sound like a similar recipe, I was intrigued to test it out and I was so happy that I did as I made this super easy chicken taco soup, using mostly canned items and everyone loved it.
I know that this may not be a traditional soup for people to eat throughout the country but I’m hoping that for those of you stuck in your homes because of winter weather, you can try something new. This chicken taco soup is made with all canned goods (unless you use a roasted chicken like I did) which makes it an easy dish to make, well for me anyway as all the canned item are staple items in my pantry.
I first started by draining my black beans in a strainer (if you don’t own a strainer here is a link to purchase one)
I put my beans in stock pan and put a can of corn and a can of Mexican tomatoes
I added a can of cream of chicken, a can of green enchilada sauce and chicken broth
You put your taco seasonings on top
I stirred it all together and added my chicken (you can use roasted chicken that you shred or you can use use caned, I tried it both ways and preferred the roasted chicken
I know this isn’t one of my true homemade recipe but I can assure you that it’s a super easy and tasty recipe. For those working moms or single dads out there, this is an easy recipe that you can prepare right from work, if you make it a day in advance, it’s even better in flavor.
