You know when your friends come over for dinner and you serve something and they ask “how was yours better than mine” and you just smile as you know you made a small change that created amazing results? This is what happened when I made my angel food cake from a box one day long ago.
I’m not opposed to using boxed cake mixes as I do believe they can be modified to create even better desserts, this is one of those examples. Have you ever made angel cake from scratch? It’s using a ton of egg whites, cream of tartar and lots of whipping. I find in using the cake box for my angel food cake to create amazing sponge cake. You can modify this cake recipe to fit any of those other recipes that you enjoy, like making it marble (chocolate and white), adding some orange, lime or lemon zest…just things like that.
So regarding that “secret ingredient”, many years ago, I was hosting a party and I wanted to empty out my refrigerator, I had a bottle of bubbly water in there so in place of the recommended water, I added bubbly water and wham…bam, my angel cake had a more lighter and fluffier result then my friends. I can’t even believe I’m sharing this with you all but I was making it for valentines and though “how could I not share this”?
I used the Betty Crocker box, it’s what I always use (don’t forget to save your box tops for your local schools even if you don’t have children in school you can donate them)
I put the ingredients in a bowl
I added some “lime” sparkling water, there is such a slight flavor of lime, to enhance that add grated lime
Look how bubbly it got already
I mixed it per the directions on the box
I put it in my tube pan (no other pan will work and do not grease it)
I baked it for about 40 minutes…look at how amazing it looks already
removed it from the oven and immediately flipped it by inserting the hole on a bottle, do not skip this step or it may collapse on you, this step ensures the height you desire
I let it cool and then removed it from the pan
Okay was this ridiculous or what? Look at that height!!!! and the best part is that the cake is light and airy. Now you can serve it with whipped cream and strawberries or like me you can dip it in your chocolate fondue from Valentines day. YUM!!!!
