OMG is there anything better than rich chocolate, sweet coconut and a salty nut? Two words, almond joy…ok, let me change it to three words…homemade almond joy…enough said!
Feeling inspired last week and needing something sweet, I decided to create a new recipe with all my favorite ingredients and why not? Do you remember the commercial for the almond joy?
Here it is:
Honestly, I was attending a dinner party for my birthday and was asked to bring something, last minute, and had nothing to bring as I was not prepared. So, I looked in the pantry and had the ingredients to make these bars. This was my first attempt at making the almond joys and while I did love them, I might play around with the recipe and see how to make them even better so watch out for an update!
Melt your chocolate in the microwave
To the shredded coconut add condensed milk and salt, mix until incorporated
add melted chocolate to the lined tins
top with coconut and almond
to the remaining chocolate add chopped almonds (this is optional)
top the coconut mixture with this topping (or omit the nuts and top with the plain chocolate)
place in the refrigerator to harden, when serving remove the liner
Next time I will top the chocolate with Maldon Salt as I think the large flakes of salt will enhance the chocolate/coconut and make the bars look prettier. I also will make these in smaller cups as they are very sweet and a bite or two is all that is needed. I may also add a bit more coconut as I lOVE coconut!!!
