Okay, I have a question regarding this recipe for my buffalo chicken baked a casserole and here’s my question, I can’t always make dinners that I want to eat now, can I???
This recipe is a far cry from any of my other recipes and it’s funny that I’m doing it right after I just did my healthy roasted chicken with veggies recipe. I don’t usually cook food like this but recently my sister Adriana and I were talking about how we grew up and all about our mom’s food. My mom would say she wasn’t a gourmet cook yet everything she served was pretty gourmet and back then we took it all for granted, we thought this is how everyone ate.
I always thought our food was simple and basic until I started to blog and recently until I began to travel and understand how others eat. I recognize that not everyone eats in the manner we did, it’s one of the reasons that I wanted to try this recipe, which to be honest is so outside of my comfort zone.
So here’s my story on this recipe, I had seen a photo of this dish that said “finger licking good” on pinterest, there was no recipe but ingredients for a buffalo chicken bake and I thought I might as well try it and even though I changed the portions for my likings, I stuck to the basic ingredients.
For those of you who know my daughter, Kelsi, this recipe is right up her alley as she loves spicy chicken wings and orders them whenever she can when we go out for dinner. So I figured why not try it, right? The ingredients are not something I would keep as staples in my house as I had to buy “buffalo spicy sauce” and “frozen hash potatoes” I even purchased “blue cheese dressing”…I know who am I, right? That being said, the dish did come out very good and Kelsi loved it! Jacob wouldn’t go near it and for me personally, I found it to be different, yet tasty, especially hot out of the oven (it seemed to have more salt than I’m used to eating, yet no salt was added).
It’s a fairly simple dish, I took my chicken breasts
cubed them and put them in a bowl
I then put my sauce ingredients together
and mixed it up
I had a large bowl with my frozen hash browns
added all my ingredients (the chicken and sauce) and mixed it well
I also added some cheese
I mixed it all up and put it in my prepared 9×13 baking pan
I baked it until the chicken was cooked and YUM!

I’ve never been a fan of buffalo chicken wings but I will say this dish was pretty good and Kelsi loved it! It’s best to serve this hot and bubbly. Of course, we didn’t eat it all so after it cooled off I put it in the refrigerator and Kelsi has been taking it out after school as a snack and just warming it up in the microwave oven. Would I make this dish again? For Kelsi I’d make anything!
