I’ve been on an emotional journey lately and I’ll leave it at that….I did plan on blogging about this dish and I knew when my dear friend Tanya came over for breakfast last Friday to catch up that I’d make this amazing casserole. I know Tanya’s favorite breakfast (as well as my daughters) is this oatmeal bake so what a better gift to make a friend their favorite meal.
I was always a working mom and when I owned my day spa back in 1999, I learned that there was a group of women that would do breakfast parties in our neighborhood. I think it was called “the First Neighborhood Coffee” and on the last Thursday or Friday of each month, a bunch of moms and their kids would get together for coffee, pastries and to gossip (lol) also to help introduce the kids to other kids and moms to other moms. Unfortunately, I could never go because of work. The group met for a few years when the group was finally coming to and end, I was finally able to attend one of the coffee’s…it was great to meet other moms and I remember the food was fabulous. I got this recipe at the house of one of the moms, I can’t tell you who I got this recipe from or if it’s in its original form as I was given the recipe like 14 years ago but I can share that since I got it, it’s been a family favorite.
It’s the easiest of recipes to make as you basically put all your ingredients together and then bake it off like a casserole. When you serve it, you put your favorite yogurt on top with fresh berries
I had to share this recipe with my cousin Lisa who, of course, changed it and made it even better! She added cranberries and white chocolate I believe. I hope you enjoy!

Ingredients
- 1/2 cup Oil
- 2 large Eggs
- 1 cup sugar
- 3 1/2 cups Oats
- 2 teaspoons Baking powder
- 1/2 teaspoon Salt
- 1 cup Milk
Directions
- Preheat oven to 350 degrees.
- Mix the oil with eggs and sugar. When it's mixed well, stir in oats, baking powder and salt, add the milk and mix well.
- Pour into a greased deep baking dish or souffle dish and bake for 35-40 minutes or until golden and firm to the touch.
