I was having a group of girlfriends over for a small dinner gathering and invited my girlfriend Susan to come a little earlier to help me prepare. I love cooking with Susan as she is very creative and can transform any dish to look like it just came out of a 5-star restaurant.
This recipe for a 5 minute appetizer is really not a recipe but it’s a great appetizer that you will love as it’s super easy to make, it looks pretty and it’s gluten free…what can be better?
I don’t have photos of the preparation just the final, basically you take a plate and put some dried apricots on it, place a small amount of blue cheese, a pecan or walnut halve and a small drizzle of honey. For those who do not like blue cheese because it’s a strong flavor, the honey will help cut some of the spicy and sharp flavor it tends to have.
Here is a photo from our dinner gathering, Susan placed the extra blue cheese on the plate and put a green apple on it as well, this way people can can a small sliver of apple to a small dollop of blue cheese.

This is a super easy appetizer to make and it offers that sweet, savory, crunch, gooey kind of an appetizer that is unique, simple and will become a gathering favorite. For this recipe, I would not change anything about it, even if you don’t like blue cheese, I’d say try it out as it really compliments the apricots.
