WOW…there is so much to say about my friend Susan but I want to first start off and say what an amazing cookie she introduced to me! This version of the thumbprint cookie came from her mom and she’s been making them for as long as she could remember. We added both raspberry jam and apricot jam and they were both equally amazing!!!!
So the back story about Susan was many, many years ago I was at a neighbors house for a BBQ and Susan began to talk to me, she seemed to know everything about me yet I knew nothing about her except that I needed to see her kitchen as I was designing a kitchen and everything I designed she did for hers. I never asked to see her kitchen, and several years later I bumped into the group, Susan’s group, again and we began to talk. I can’t express how lucky I have been to be friends with her as she’s an amazing person! Not only is she a great friend, but she’s an amazing cook and baker. Susan has helped me in catering jobs and she’s the kind of person that always creates a sense of calm.
When I asked Susan to open her house and asked if can she introduce me to a family tradition cookie, she was more then happy to help out. This recipe for the cookie is so super easy, it has only a limited of ingredients and is not super sweet, which is probably why I love it so much. This is a super easy recipe as there are only a few ingredients and super easy to make
You put your butter with your brown sugar
and you cream them together
you add your flour and egg yolk and mix well
in a small bowl add your nuts with the vanilla and toss
you whip up your egg whites
make small balls and toss in the egg white
and roll in the nuts
put on your baking sheet, we used parchment paper, it’s also very convenient to use silicone mats…click here for my favorite silicone mats
and bake for 5 minutes
remove from the oven and using a fork press down (easier then a thumb, thank you Susan)
put your favorite jam in the indenture
bake for an additional 15-20 minutes or until browned
This is truly one of my favorite cookies that I’ve made for the season, they are so easy and taste delicious!!! Although I think making them with one of my closest most dearest friends made it all the better!!!!!
