With super bowl just a few weeks away, I wanted to continue with sharing some of my favorite appetizer recipes. This recipe for turkey meatballs as appetizers is a new recipe for me as I was preparing for a cooking class in which we published in the catalog for meatball poppers and we had no idea what that meant at the time.
What the students do not realize is that we have to prepare the menu 6 months in advance, sometimes leaving us scrambling last minute with perfecting a recipe, this recipe for turkey meatball poppers is the perfect example. We tried several recipes for turkey meatballs, we even threw gatherings with friends so we could experiment on them…here was how this recipe came about:
- The first version for our turkey meatball poppers was using crescent rolls; we wanted to simplify the menu so we purchased pre-made meatballs and then baked them off thinking we would serve the meatballs with a sauce…no way was this going to work for us as the crescent was too heavy for us.
- The second version was a lovely turkey meatball and it was a super easy recipe and concept. Basically you would make the homemade meatballs and a homemade sauce, the sauce was poured over the raw meatballs and then baked together. We loved the flavor of the turkey meatball but the sauce was a sweet and sour sauce, that threw us off. We also didn’t love that the meatballs were baked in the sauce, even if it was easy.
- We then tried this recipe for turkey meatballs, we went the opposite of the sweet and sour and added chipotle directly to the meat, we shredded the onions as we knew that no one likes to bite into an onion and we used turkey sausage (breakfast sausage) thinking it would add more flavor upfront…we loved this recipe! The only change we did was to omit the chipotle from the sausage and we served it with my chipotle cranberry sauce..everyone loved it!
add the cheese and flour
add grated onions
mix well and shape into balls using an ice cream scooper (this way all the meatballs are the same size)
bake for 25-30 minutes and serve immediately
I loved this recipe as it was so easy to make, the breakfast sausage gave so much flavor to the meat, the cheese added the creaminess needed, the onions add flavor yet you can’t see them…we couldn’t stop eating them. We made these with the chipotle sauce and it was the perfect dipping sauce. This was one of the class favorites and it will be your favorite as well.
