Hello everyone and happy spring! Almost 2 years ago I shared a recipe for a lemon blueberry cake with walnuts that I loved. Today I wanted to do a do a do over with that recipe!
OMG…I think I died and went to heaven with this recipe…This recipe for lemon blueberry came from my friend Patricia!
Everyone knows I love granola, I’ve basically have made the same granola for as long as I can remember. Then I try new granola recipes and end up loving them as well, I’ve posted some my favorites granola with cranberries, granola with dried fruit, apple pie granola and now my new favorite from “Model Bakery” cookbook, my granola with nuts and fruit. …
I don’t know about you but with the hot summer months, I’m not a fan of large meals and I don’t tend to have a sweet tooth. That’s why I’m sharing this super easy, healthy and tasty fruit and nut bar recipe which has dried fruit and nuts and no chocolate in this bar recipe…sorry :(. And let’s face it, nuts and dried fruit are much better than ice cream as they are all protein based (mostly).
I have to apologize for not blogging in the past few weeks as I just quit my job and it was a tough few weeks for me and blogging was not a priority so I thank you for being patient with me.
So this morning I wanted to make something to “blow my socks off” and OMG….wait…OMG I did it!!!!
Let me tell you how I came aware of this recipe, I was cleaning out some of my old recipes and I stumbled upon a french toast recipe with blueberries. It was a simple recipe but the original recipe was for a very large batch, it probably came from a commercial kitchen and was given to me 5-6 years ago. Back then I would never attempt to try and break down the recipe but today I just knew I had to try it as I pride myself in taking recipes and figuring out how to make them better. Boy did this recipe surpass what I thought it would be!!!!
Even though it’s going to seem like a lot of steps, you can bake off the “blueberry cake” a day in advance then in the morning you can slice and prepare. It’s great for company!
Like I said it’s very simple, you basically cream your butter and sugar together
Add your eggs, one at a time…then your vanilla, mix well. Add your dry ingredients and then the washed blueberries
I did not return the mix to the mixture as I wanted my blueberries to be whole so I hand mixed the blueberries into the dough.
Your dough will be very thick, here it is in my pan that was greased
I then smooth it out
and baked it for 50 minutes or so
Now the french toast part…I sliced the cake in 1 1/2″ slices
Mmmmmm Mmmmmmm…look at that!!!
I wanted grill marks although it’s not required I thought it would look pretty…so I got my grill nice and hot
dipped my blueberry cake into an egg
placed it on the grill
looks pretty with the grill marks ha?
omg…do you see that blueberry cream cheese frosting behind it? lol
I’m sorry my platting is not so pretty, I was in such a hurry to eat it I didn’t stage it so well..I’m working on providing better photos 🙂
Again, it seems like a lot of work to do all in one day but if you make the cake the night before, it literally takes minutes and is sooooo worth the time needed. I did make a second plate and I did it the more traditional way in a pan on on the grill…I think I’d recommend doing it that way instead.
I hope you enjoy this recipe, please email me if you would like the full version as doubling the recipe may not work.
I know, everyone has a blueberry crumb cake recipe…I guess it’s my turn to try one.
