If you asked my friend Lydia if she was a great cook she would probably say no…yet every time she makes something, I just love it!
Lydia is one of those people who will share any recipe with you, all you have to do is ask, she is also great at experimenting so you never know what you may have at her house when you visit her home for dinner. Many years ago, while visiting her for dinner, she made these sweet and spicy rosemary cashews as an appetizer, I had never had such a combination on a nut before and I loved the concept of the sweet from brown sugar with the spicy cayenne and then to add the savory rosemary, OMG, I was sold!
Preheat your oven and add your cashews
meanwhile add the salt, cayenne, butter and brown sugar to a pan
add your chopped rosemary
and let the sauce get bubbly
remove the cashews from the oven
immediately add your sauce to the hot cashews and toss
once they are completely cooled off you can enjoy them!
The hardest part of this recipe is waiting for the nuts to cool down and trust me you do not want to eat them when they are still hot. The sweetness from the brown sugar, the spice from the cayenne and the rosemary…it’s like a match made in heaven. This is the perfect nut appetizer to put on any table, if you are willing to share them that is! I hope you enjoy this recipe as much as I did!
