A few weeks ago I was home preparing dinner when my good friend Susan called to see what I was doing. I told her I was making dinner, an appetizer, some soup, homemade biscuits and a dessert. She too was making a fabulous dinner.
So, silly us thought it would be fun to combine our dinners (as if one dinner wasn’t enough for the 2 families). I packed up all our goodies and went to my friend’s house. While all the food we ate was fabulous (my favorite word these days to describe food), these stuffed mini bell peppers were really a big hit.
I basically looked in my fridge to see what I had on hand to make this recipe. I had a package of small bell pepper so I put my oven on to preheat and sliced the bell peppers in half
I then found some sausage I had and diced it into very tiny pieces
I then added the sausage with some cream cheese and put the mixture into the bell peppers added some parmesan cheese and then baked them off.
This recipe is a great example of how you can take what you have in your kitchen and make it work. You can change out what works for you, for example, you can change out the meat to any type of meat you like, I like spicy so having the chipotle sausage was the perfect for me. I also had cream cheese on hand, it would have been lovely to have had goat cheese to add a new layer of flavor…as a matter of fact, having some gruyere cheese would also have been nice. Take my concept and it make it your own!
