Wow, it’s been a while since I last did a post, however today I have a wonderful shrimp, tomato and sausage kebab that will be perfect for the summer BBQ’s!
I love having seafood with meat, the whole “surf and turf” idea and this is a more economical way of bringing the two together. The hardest thing about this recipe is actually putting the ingredients on your skewer.
We used deveined shrimp and just peeled off the shell, leaving the shells on the tails (this is a personal choice as I love the way it looks with the tails on). I cut up some sausage, we used smoked sausage and it worked out just fine with the delicate shrimp and cherry tomatoes. If you wanted to change out the vegetables, feel free to explore, however, we just love tomatoes on the bbq.
If you are using bamboo skewers, you must start off by soaking them in water, this helps them to stay moist while on the bbq and will, hopefully, not burn while they are cooking.
Meanwhile, toss your shrimp, sausage and tomatoes in a bowl, add some oil and seasonings and toss to coat.
Now have some fun, add the seasoned meat/vegetables to your skewers, in any order you want.
Place on bbq and cook until the shrimp are cooked through, about 3-4 minutes per side, make sure to flip the skewer to cook both sides.
Remove and enjoy!
