I love zucchini (squash) and being raised Italian we ate it often, mostly pan sautéed with herbs in a chicken broth, it was always delicious! I do remember my mother tried frying zucchini sticks once and it was like we just won the lottery as she didn’t often venture out and try something new, especially something fried.
I have been trying to eat a little healthier and made a new salmon dish (click here to see it), I did not want a pasta side dish so I thought I would be creative, I bought a spiralizer had some fun! I loved using the spiralizer as it felt like we were eating a pasta dish, yet it was zucchini (squash).
Here is what I did, I took my zucchini (squash) and I cut off the bottoms (leaving the tops for me to hold while I used the spiralizer)

I did this to all my zucchini, see you love my spiralizer as well lol
sliced up some button mushrooms
sauteed my mushrooms with garlic until soft
added the shredded zucchini with salt and pepper
and cooked until the zucchini was soft and tender, I then platted the zucchini and topped it off with parmesan cheese and Italian parsley
This is a great recipe for gluten free friends coming for dinner or where you would normally want to serve pasta. It was very healthy and delicious…I even converted a non zucchini lover into trying and enjoying this recipe. For those of you ready to experiment with new gadgets and recipes, give this one a try…it’s amazing!
