Salmon with Mustard Sauce

I’m currently working in a commercial kitchen and when preparing the food, I often hear these words…”now you are thinking like a chef” when I do something outside of the ordinary.  I can share that this recipe is one of those kind of “thinking outside of ordinary” kind of recipes.

When I found this salmon with mustard sauce recipe, I knew I had to make it.  When I made the salmon, I felt like this is one of those recipes that can take a home cook and make them look like a professional chef.  If you eat salmon, you will find that this recipe is one of the easiest fish recipes you can make with amazing results and I promise your friends will be very impressed.

For presentation, you can use springs of thyme or lemon slices on the plate.  I plated mine on a platter for the photo and used sprouts, only because I had some in the refrigerator.

My salmon was purchased at costco, they had “wild salmon” and I was so happy to see that as I always prefer to purchase wild over farm fed.  I had to remove the skin and I had to portion out the salmon but it was all worth it.  Mustard really compliments salmon so I knew this was a winner…and I was right.

Think like a Chef Salmon with Mustard Sauce

Ingredients

    For the Sauce
  • 2 tablespoons Whole grain mustard
  • 2 tablespoons Dijon mustard
  • 3 tablespoons Honey
  • 1 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 tablespoon Thyme leaves
  • 1 teaspoon Garlic, minced
  • For the Salmon
  • 1/2 of a Salmon, skin removed and cut in 4 oz portions
  • 1/2 of a Lemon, juiced
  • Salt and pepper, to taste

Directions

  1. Preheat your oven on broiler. Line a baking sheet with foil.
  2. Combine all the ingredients for your sauce, mix with a whisk, place aside.
  3. Cut your salmon into your 4-5 oz portions and place on foil. Drizzle your olive oil, then squeeze your 1/2 lemon juice on, sprinkle with salt and pepper.
  4. Place salmon in your oven and bake for 5-7 minutes (depending on how thick your filets are you many have to go less in time or more).
  5. Serve as I did with a small amount of sauce on top...enjoy!
