I know I do a lot of roasted tomatoes recipes but I love them and with summer coming to an end I wanted to take advantage of making one last batch. This recipe is a little different than my roasted tomatoes with polenta and my roasted garlic tomatoes as this recipe has mint in it, yes mint!
I experimented with different breads and cheeses and found the perfect combination, sliced sourdough with goat cheese. If you do not like goat cheese maybe try ricotta or cream cheese, although the flavor will be very different than my recipe.
On a baking sheet put your tomatoes, honey and olive oil
add mint, salt and pepper
roast for 20-25 minutes
while they are roasting toast your bread
add very little goat cheese to the toasted bread and top with roasted tomatoes
This is a very good recipe and I did like the addition of mint to the roasted tomatoes. Like I mentioned, I would not change out the cheese as the strong flavor of goats cheese compliments the sweetness from the roasted tomatoes. I could see using the tomatoes in a sandwich with turkey, cheese and the roasted tomatoes, they would also be great with eggs and goats cheese. I hope you enjoy this recipe as much as I have. Enjoy!
