Roasted potatoes, with yams, sweet potatoes and baking potatoes, tossed with an oldie but a goodie seasoning pack will become your family favorite side dish…I promise you!
Rooted vegetables like yams, sweet potatoes, carrots, turnips, parsnips, beets and fennel come into season in the fall and stay in season until spring. Nowadays you can purchase most fruits and vegetables throughout the year, just keep in mind it is always best to purchase any fruit or vegetable during their peak season!
Roasting any vegetable brings out a sweetness that a BBQ or stovetop can not duplicate, this is why this recipe is so great. The key to this recipe is to cut all the potatoes the same size so they cook evenly.
Here is a photo of the 3 different potatoes I used, the top potato is an ordinary baking potato, the second one is a yam (often referred to as sweet potato in the markets) and the bottom one is a sweet potato (often hard to find in markets as not all markets carry them but ask the produce manager as these potatoes are worth the hunt).
Peel the potatoes
Dice the potatoes into same size pieces, add chopped onion
Place on a baking sheet, add Lipton Onion Mix (that’s the twist and secret) and olive oil
Roast for 20 minutes and toss
you are looking for that roasted bottom as that’s what brings out the sweetness of the roasted potatoes
roast for 20 minutes longer or until soft and evenly browned and serve!
I am sure most of you have made roasted potatoes in the past as you already know what a great side dish it makes but you have to try this recipe! The Lipton seasoning pack compliments the roasted potatoes and creates a magical side dish!!! Look closely at my photo, as you can see the onions and roasted potatoes have caramelized bringing out the natural sweetness from the potatoes…omg this is an amazing recipe that you and your family will love!!!!
