It’s “Scrumptious Saturday”…So for dinner the other night I made some homemade roasted butternut squash and with that dinner I made a chicken dish and some kale coleslaw. I had gotten a bunch of emails asking what chicken I made so I thought today I’d post that recipe as it was pretty amazing!
Like most of my chicken recipes, I cut my chicken breasts horizontally and seasoned my chicken with flour, then I placed the chicken in my seasoned flour. And like most of my one pot chicken dishes, I put oil on the bottom of the pan with some cut up garlic. I then place my chicken in the pan
and when I begin to see the chicken cook through (see below how the raw chicken looks and the ends are turning white), I flip it and cook the other side.
I do not crowd my pan as you can see I only do a single layer of chicken and when it’s cook through, I remove the chicken and place it on a plate and do another batch until all the chicken is cooked up.
Meanwhile, I sliced up my mushrooms, nice and thin and cut up some canned artichoke hearts.
I also squeezed my lemon juice so I was all ready to go. When all my chicken is cooked up and plated, I placed my mushrooms in my pan and cooked them up for just a few minutes.
I then added my lemon juice, placed my chicken back in the pan (if you need to add water you can to dilute the lemon flavor or if you don’t like lemon chicken, only do water or broth)
and added my artichoke hearts.
I covered the chicken and let it cook for about 8-10 minutes. Just before serving I put some capers on top.
This is a super easy and tasty dish that everyone will enjoy…I promise!
