What a treat for you all…recently I was looking through old recipes and stumbled upon an oldie but a goodie, one pot chicken with artichokes and fettuccine. I was given this recipe over 20 years ago, when I lived in Portland, Oregon and I made this chicken dish all the time, especially when I was entertaining.
This is not an expensive dinner to make and really all you need for this chicken recipe is a pound of chicken breast (do not deviate and use thighs for this dish), a can of artichokes, some mushrooms (optional but preferred) then toss it on pasta or eat it as is. I served this one pot chicken dish with a nice tarragon dressed salad, it was a simple salad as I used butter lettuce and a homemade salad dressing, click here for the tarragon salad dressing recipe.
I used a cast iron pan which I loved using, lightly floured my chicken and sautéed it in a little oil and lightly browned the chicken
added chopped tomatoes
added the marinated artichoke hearts
topped it with sliced mushrooms
added my seasonings, covered and baked for 1 hour. Uncover and add the sherry, bake for an additional 10 minutes
Shred chicken or cut chicken into smaller pieces and serve over pasta
I love this one pot chicken with artichokes…LOVE it!!!! It is a super easy recipe as you need only one pot, chicken and an oven. The juices from the pan is what becomes the sauce for the pasta. I promise you this recipe will not disappoint any of your guests. I served it with my tarragon dressed salad…the meal was rated one of the top five from my boyfriend, that’s how good this recipe is.
