A unique take on a potato salad…no mayonnaise needed. Instead, I replaced the mayonnaise with oil and fresh herbs!
With the hot summer months, here in California, I got motivated to try new recipes and created some amazing new dishes. I am so lucky as I am currently dating someone who loves to BBQ, which is not my forte so when he BBQ’s I get to be creative with side dishes. We tend to BBQ potatoes a lot, so I wanted to show off some of my culinary skills and knew I could create something special!
This recipe was created for two reasons, 1) I had no mayo and wanted to be creative 2) these were the ingredients I had in my refrigerator. Nonetheless, the combination of flavors and with no mayonnaise created a unique potato salad; it was a simple, tangy, spicy, a substantial side dish and again, no mayonnaise.
Here is how you can make this recipe at home:
First, you need to boil the red potatoes (do not use russet potatoes for this recipe and do not cut the potatoes before cooking them)
Meanwhile, make your dressing by adding all the remaining ingredients in a bowl
When the potatoes are finished cooking, drain them and quickly cut them into bite-sized pieces
while hot, add the dressing, toss and coat the potatoes
serve and enjoy!
I loved how this recipe came out, here are some suggestions for a change:
- if you do not like cilantro, replace the cilantro with Italian parsley
- If you do not like jalapeno, remove them
- If you remove the jalapeno, you can add roasted red peppers
