Muesli is the perfect summer oatmeal, served cold with chopped nuts and dried fruits!
I never heard of muesli until I worked in a commercial kitchen. In fact, the idea of eating a cold cereal is not something that I ever would have ordered off of a menu as it would not have sounded appealing to me, yet I love it!
I was craving this recipe for muesli with no added sugar for weeks now; I even contacted my old boss to get the recipe…no such luck. I created my recipe for the muesli, and I have to say, I love it!
From the research found, muesli originates from the Swiss and is a cold cereal consisting of oats, nuts, and fruits…it’s the perfect summer breakfast! I also realized it’s mostly protein, with added yogurt, oats, and coconut milk and it’s the easiest breakfast you will make that keeps for days!
Add yogurt, milk orange juice, vanilla and oats (raw, do not cook) to a bowl
shred 2 apples
add to your mixture
mix until well blended
let the mixture sit overnight and serve with your favorite toppings (I used chopped nuts and dried fruit)
Why you will love this recipe
- The coconut adds sweetness, so no sugar needed
- The orange juice is perfect with the apples
- The nuts/dried fruit adds crunch and more flavor
- It keeps for days, can be eaten for breakfast or as a dessert
- No sugars are needed for this recipe!!!!
I know for some of my audience this may be a stretch in trying a new recipe, but I can assure you it’s so worth the try. It’s economical to make, perfect for hot summer days and will be the ideal complement to any brunch!
