Everyone knows I love granola, I’ve basically have made the same granola for as long as I can remember. Then I try new granola recipes and end up loving them as well, I’ve posted some my favorites granola with cranberries, granola with dried fruit, apple pie granola and now my new favorite from “Model Bakery” cookbook, my granola with nuts and fruit. I love this granola because of the different spices used as it had nutmeg, cinnamon and I added some ginger. This granola also had a bunch of different nuts and I love variety in life so having so many different nuts just enhances this granola for me.
I want to step back and talk about the book “Model Bakery”, I read this book from cover to cover and I picked a bunch of recipes that I would like to try and of course I will let you know what I think about the recipes or any changes I have made to the recipe (I did change a few things on my recipe of the granola). I think the book is well written and is a great book for anyone who wants to explore or push their boundaries in baking, more so with the breads as muffins are very common in how they make them. They do a “biga” which is basically a starter for your breads and making the biga creates layers in the flavors of your breads so if they require a biga, do it! I think the photos are great and the breads look amazing, I want to try everything, I just think their breads are a little more on the intermediate level of baking and someone would want to challenge themselves a little with the recipes.
When it comes to the muffins and cakes, they are all simple recipes and even the beginner can make them from scratch and let me tell you, making a muffin or cake recipe from scratch is 100 times better then most boxed recipes. If anyone has a request for something they would want me to make, please email me and I’d be happy to do a video and log my changes or opinions (although it may be a bit before I post the recipe as I have a few already in the mix).
Back to my granola here is what I did I put my oatmeal in a bowl
I added all my nuts and seeds and mixed well
added my seasonings
I added my oil and honey and tossed it again, I then placed in it my oven and baked it for 30 minutes, here is the before
15 minutes into baking I added coconut as I like the coconut to be toasted
here is my after shot
when it was done baking I removed it from the oven and added my dried fruit
I just put the dried fruit on top of the hot granola
I waited until it cooled off and then I put it in my jar
This is my new favorite recipe and I absolutely love love love this recipe. While all granola is basically the same, the seasonings combined with the nuts, seeds and fruit really compliment each other. I added the ginger to the recipe so if you do not like ground ginger, leave it out and I added the brown sugar.
