MMMMMMmmmmmm is this yummy chicken!
Way back when, like 15 years ago, I got a contraption for a vertical chicken roaster as a gift, I didn’t even know what it was when I got it but I learned real quick. And because of that little contraption, I used to make roasted chicken all the time as it was so easy, healthy and I could change it up each time as well. Then I stopped making making my roasted chicken, I’m not even sure what happened, maybe I just burned out at making roasted chicken, I put my contraption away and I forgot all about it. Recently, I was cleaning out my cabinets and in the way back of my cabinet, I found my chicken roaster, I immediately went out and purchased a whole chicken because I knew I had to make chicken for dinner.
The best part about making this dish is that you can omit the veggies or you can change up the veggies to anything you like. It’s great because the juices from the chicken drip to the bottom of the pan and your veggies get this amazing flavor from the seasonings and chicken juice!
If you do not have a vertical chicken roaster, you can use a can of beer…yes beer! Basically you drink, I mean pour out some of the beer and the can becomes your contraption, I don’t drink beer from a can so I didn’t have one to show you as an example but click here and you will see a recipe using the beer can as I have not made it that way before.
So basically I took my chicken and placed it on a baking sheet
I put some olive oil on and then seasoned my chicken (heavily)
I also seasoned my vegetables and put them in my pan, see my chicken roaster?
I put my chicken on top of the roaster and baked it in the oven until I got an internal temperature of 165, I removed it from the oven…YUM!
I removed my chicken from the roasting stand and covered it with aluminum foil (I forgot the photo, sorry), then I let it rest for 5 minutes. I cut it up and put the chicken and veggies back in the oven
See how lovely the veggies came out?
How good is that? I then plated my chicken…OMG the memories, the taste, the smells…yum!
