Do you know when you make or find that perfect recipe that you just want to yell from the rooftops? Well, this recipe for a healthy quinoa salad is that recipe, it’s that recipe that is perfect for the spring or summer and it’s great for picnics or just served as a side dish although I can make a meal out of quinoa.
It amazes me that I have only shared two recipes including quinoa as I love eating it and make it all the time, here is a great recipe I made for the fall using quinoa, it’s a quinoa with pomegranate dish and is very healthy, I also make quinoa cakes using black beans.
This recipe is healthy as the dressing is basically lime and olive oil…how bad can that be? Here is how I made this recipe.
I cooked my quinoa according to the package instructions, while it was cooking I prepared my ingredients by cutting my scallions
added chopped parsley
and chopped mint (this is what I would say is the secret ingredient), just like my Israeli salad I like to add mint as no one detects the mint adding a layer of flavor
some chopped advocado
cut up red grapes
zest of 1 lime
added my quinoa, juice from the lime, oil, salt and pepper, tossed it all together
This side dish for quinoa is not only healthy, it’s also a pretty dish and can be made in the morning. The salad can be made in less than 30 minutes as most of the chopping takes place while the quinoa is cooking. The lime with the parsley or cilantro is a great complement to this dish. Everyone will love this one!!!!
