I don’t even know where to begin on this recipe…hmmmm…let’s see, my Healthy One Pot Chicken is so easy, so amazing and is so versatile that you can’t go wrong with this recipe, that I can assure you!!!
I had seen Sally Bee on a morning news segment a few years back and immediately bought her book, I flagged many recipes, although I only made this recipe that she labeled “chicken casserole”. About 2 years ago I decided to make this Chicken dish and prepared it in my electric wok…that night my girlfriend Janine called and asked if she could come over and bring some friends to karaoke, of course, I said yes. Janine had brought over a few more friends then I thought so I couldn’t really offer dinner to everyone so my healthy one pot chicken had to wait. It cooked for about 1-2 hours more than I had originally anticipated. By the time things slowed down, I was ready to offer the dish to whoever was courageous to even try it. Even after cooking for a few extra hours, on low I might add, it was amazing!!!!
I’ve made this dish for dinner parties and played with the ingredients, it’s fine if you omit the bacon so have some fun with it!!! If you make this dish, email me photos (email@example.com) and I’ll post them on my blog if that’s ok with you.
So basically I cut up my chicken into chunky pieces and put them in my pan to brown
while my chicken was browning, I cut up my bacon
after my chicken par browned I added my bacon and browned them together until nice and brown
I then added my cut shallots and garlic
and my cut bell peppers and zucchini
I added my wine/broth
covered and cooked for about 1 1 2/ hours
and served it on top of brown rice
This is definitely going to be a “keeper” recipe as it takes regular chicken and makes it extraordinary!!! I sprinkled it with chopped parsley for the photo. Let me know what you think when you make it.
