Here was my question…”What do you do when you have left over chicken from your BBQ’s? and you’re Italian???” And here is my answer, “You make chicken salad…hold the mayo!”
Being raised Italian, we barely used mayo so you will find in many of my dishes I hold the mayo and I typically use olive oil and fresh herbs. This is a very versatile recipe but you can not use chicken that has BBQ sauce on it, think about your flavors…if you have a question about using your chicken, pop me an email or leave a comment and I’d be happy to help.
This is a super easy and healthy recipe dish…you basically take your chicken, slice it and cut it in small pieces (see photo)
You take a handful of tomatoes, a sliver of red onion, some basil and Italian parsley
cut up your ingredients to about the same size, you are looking for a bite of each item so you can add more or less based on your wants/needs
you toss it all in a bowl, add your olive oil, salt and pepper, toss and serve it’s that easy
This is an amazing chicken salad that you can use leftover chicken with, it holds up lovely and is great for picnics. Can be served as an appetizer, in a sandwich or in a lettuce wrap. I hope you enjoy this recipe as much as we do.
