YUM…simple and easy, a fennel salad with oranges, red onion and a homemade dressing! If you haven’t ever tried fennel, you have no idea what you are missing out on!
Fennel is that vegetable that people forget about, if you have never tried it before you will find it has a strong flavor anise flavor (some say licorice). When fennel is in season it has a sweet flavor and the crunch of the fennel is perfect for any salad. Often times I will shave fennel and throw it in to my salad, when shaved thin, it is subtle and just adds great flavor. I did make a baked fennel side dish, baking the fennel brings out a completely different flavor.
With all the rain we are having I thought I’d make this salad. I first shaved my fennel I used a mandoline for under $20, this is a must have tool that will simplify your life.
in a bowl I added the shaved fennel, then I sectioned an orange, to section the orange, remove all the skin and pith (white part that is bitter), once all the flesh of the orange is visible, cut between the white sections to remove only the flesh of the orange
add the orange segments to the fennel
using that same mandoline shave some red onions and place in the bowl
add some fronds from the top of the fennel plant
add the oil, salt and black pepper…serve cold
Oranges bring out the flavor of the fennel, making it more sweet. I would only use red onions for this recipe as red onions is a little sweeter than the white onions. If your fennel does not have the fronds from the tops it’s fine to skip adding it.
