If you are looking for a recipe to knock the socks off of your guests, my chicken with mushrooms, shallots and Boursin cheese will become your new best friend!
My friend Peter was coming for dinner the other night and knew that I wanted to “wow” him. I was thinking it had to be something rich in flavor, simple, elegant and a recipe that left you wanting more.
As inspiration, I kept thinking back to a recipe I acquired, years ago, using a pre-made gorgonzola cheese, cranberries and pecans. Because I couldn’t find the gorgonzola spread, I decided to use a shallot and chive Boursin cheese (Boursin cheese is a soft, spreadable cheese, it is creamy and melts perfect for recipes as it won’t curdle).
Add sliced mushrooms to your frying pan
once cooked, remove the mushrooms and place on a plate
in the same pan, cook the chopped shallots until translucent and browned
remove the shallots and place oil in pan, add floured chicken, cook for 4-5 minutes per side or until cooked through, remove from pan
add Boursin cheese to pan
let cheese melt, add chicken stock to thin out the cheese
season with salt, pepper and dried oregano
add chicken back to pan, top with cooked mushrooms and shallots
cover, let chicken simmer for 7-10 minutes and serve!
I served this chicken dish with my quinoa and roasted vegetables and made some roasted okra
This is such a simple, elegant and flavorful recipe…while it was rich in flavor, it was not over the top rich. The chicken was perfectly cooked, the quinoa complemented this dish and the roasted okra sent this dinner over the top, I’m telling you, I knocked Peter’s socks off!

Ingredients
- 1 pound Chicken Breasts, pounded
- 8 ounces Mushrooms, sliced
- 1 small Shallot, chopped
- 4.4 ounces Boursin Cheese (I used the shallot, chive)
- 1/2-1 cup Chicken Stock
- 1 tablespoon Oil
- 4 tablespoons Flour
- 2 teaspoon Oregano, dried
- Salt and Pepper to taste
Directions
- In a frying pan, saute mushrooms, remove mushrooms and place on a plate. Add shallots and cook until lightly browned and translucent, remove from pan and place on a plate.
- Lightly flour chicken breasts, place oil in frying pan, cook chicken for 4-5 minutes on each side or until cooked through, remove from pan.
- Add cheese and chicken stock, add oregano, salt and pepper. Place chicken back in sauce, top with mushrooms and shallots. Let chicken simmer for 7-10 minutes, serve hot. Enjoy!
