I love when it’s summer time as I come out of hibernation and start experimenting with side dishes and easy entertaining recipes. This recipe for cole slaw uses Ramen noodles (don’t judge me) and no mayonnaise! Last year I was at a party where a lot of my old neighbors attended, it was so nice to see my old neighbors. It was a pot luck party and my neighbor Nancy brought this coleslaw recipe and I had to ask for the recipe. I was surprised that it had Ramen noodles in it but I loved the texture and flavors of the dressing. It is a super easy recipe to make and it works well at any BBQ…also it makes a large batch!
To make it easy I started off with a 1 pound bag of coleslaw
added purple cabbage that I sliced (you can omit this or can also add napa cabbage), I added the purple cabbage to my bowl
added them to the bowl
removed the Ramen noodles from the package, kept the seasonings for the dressing
crumbled the Ramen noodles and placed it in the bowl
toasted some slivered almonds and placed them in the bowl
made my dressing, I used the seasonings from the package as part of the dressing
Tossed it all together and served it!
Everyone went crazy for this side dish…let’s face it who doesn’t love coleslaw, especially if it doesn’t have mayonnaise. The peanuts added a nice crunch and the dressing is the perfect combination of a little bit sweet and tart. I initially thought I would reduce the sugar but after letting the coleslaw sit for a little bit, prior to serving it, I realized it was perfect just as is. If you find it to be too sweet, reduce the amount of sugar.
