What’s better than a hot cup of coffee in the morning? A slice of homemade cinnamon cake with a crumb topping to go with your morning coffee that is what is better for me :)!
When I worked in a commercial kitchen I often made cinnamon muffins with a gooey filing and everyone loved them! I was the girl who never let anything go to waste, even when it came to pastries and I loved being creative. I was inspired to create a cinnamon cake as I was dating a man with 2 younger children and I thought it would be nice for the children to wake up and have something sweet and I knew it would be easy on my ex as all he had to do was slice it up and serve it, a win win!
Initially I was not intending on sharing this recipe for my cinnamon cake so pardon the lack of photos (I usually take photos of recipes as I am making them and when I know I’m posting something I make sure to capture all the essence of the recipe) but when I posted the above photo of the cinnamon cake, I got so many comments from friends asking for the recipe that I felt some photos are better than none and more importantly, was the recipe…and so here it is!

Ingredients
- 1 1/2 sticks Butter
- 1 cup Sugar
- 2 large Eggs
- 4 1/2 cups Flour
- 2 1/2 teaspoons Baking Powder
- 1/4 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1/2 teaspoon Nutmeg
- 3/4 cup Milk
- 1/2 cup Brown Sugar
- 1/3 cup Old Fashioned Oats (not instant)
- 1/2 cup Flour
- 3 tablespoons Butter, room temperature
- 1/4 teaspoon Cinnamon
Directions
- Preheat oven to 350 degrees. Sift dry ingredients together set aside.
- Cream together the butter and sugar, beat until mixture is pale in color, 3-5 minutes.
- Beat in eggs, one at at time, until eggs are incorporated. Add 1/3 of the dry ingredients, mix until incorporated, add 1/2 of the milk, mix until incorporated, 1/3 of the dry ingredients until incorporated, the rest of the milk, mix and finish with the dry. Mix until smooth but do not over mix!
- Pour mixture into a greased loaf pan and top with crumb topping.
- Add brown sugar, oats, flour, butter and cinnamon in a bowl and using a pastry knife or 2 forks. The purpose is to create evenly sized pieces of butter, coated with the sugar, oats and cinnamon.
