My daughter Kelsi has decided she no longer likes chicken…I’m thinking “WHAT?” As that does not work for me, as I totally love chicken! So lately, I’ve become very resourceful in making chicken dishes and teaching her the benefits of using leftover chicken to make it tasty.
I had some chicken tenders in my freezer and decided to make an easy chicken dish with them so I marinated them with lemon juice, a little oil and some herbs. I then sauteed my chicken in some oil, we ate them for dinner one night and of course I had leftover chicken and I thought it was the perfect chicken to make a curry salad out of.
I took my chicken and I shredded it
I then put some mayonnaise on it, the mayonnaise will depend on how much chicken you have, I used about 1 1/2 tablespoons
I tossed it all together and added some curry powder, you can add to your tastes and quantities
I had some golden raisins and added some of those as well
after tossing it I thought it needed some nuts so I put in some nuts that I had on hand, I used sliced almonds
I tossed it all together, added some chives from the garden, placed a small scoop full on some lettuce for lunch…it was delicious!!!
For this recipe, I used leftover chicken, you can always boil some chicken or bake some if you don’t have leftovers. I would not use leftover BBQ chicken or any chicken that is strong in flavor, my chicken that had lemon and some herbs were perfect.
