Last Friday I was in charge of making pasta for my daughters soccer game. For all the home games the team asks parents to volunteer and bring a pasta dish that they can sell and the money goes back to the school team. It always puts a lot of pressure on me as everyone knows that I am Italian and that I went to culinary school.
I decided to do 2 pounds of a traditional baked ziti that was cooked in a red sauce with no meat as I it was an easy recipe to make and I knew everyone would love it. I also thought I would try this new recipe for a Chicken Spaghetti Bake that was given to me by a friend who promised it would be my favorite dish. Honestly I did not think much about the dish and just figured I would make 1 pound of spaghetti and see how it went.
This is a super easy recipe to make and is perfect for the working parent as you can make it in about 30 minutes. While your spaghetti is cooking you prepare the sauce by melting your cheese with the rotel (this is a case of 6 but I wanted you to see how it looks as I was not familiar with rotel), milk and cream of chicken
shred your chicken
place your cooked pasta on top of your chicken
add the sauce, toss and place in your casserole pan (I’d recommend a glass one for this recipe as it looks pretty once baked)
Bake it for 20 minutes uncovered and removed it from the oven, I just had to try it
The chicken spaghetti bake was actually really good, my daughter came home and tried it and also really liked it. As a matter of fact she liked it so much that after her game she asked if she could have some more, it was sold out!!! My daughter kept asking all weekend “and why did you bring the whole pan of spaghetti to the game”? It made me very happy to know that she loved it that much. This is a great recipe for working parents or anyone needing something in a rush that is a “sure thing” kind of a dinner and again, it is super easy to make.
