A chicken club salad??? Why not! Chicken with iceberg, bacon, avocado and my favorite zesty creamy Italian salad dressing makes this a salad worth trying today!
I was out for lunch the other day and my friend ordered a club sandwich, club sandwiches are not something I see ordered often, out in California anyways. I do love the concept of the club sandwich though, chicken, bacon, lettuce and tomato, simple!
This salad recipe is my inspiration from that lunch as I grew up loving club sandwiches and wanted to try a healthier option by making a salad.
I used both iceberg lettuce (crunch that was needed)
and red leave lettuce (sweeter)
cooked up some bacon
used purchased cooked chicken breast (that I chopped up)
added chopped avocado, mixed it all together
Salads can be tricky, as simple as they are! To find the perfect balance in flavors I felt I needed a mayonnaise type salad dressing so I created a zesty Italian dressing that worked out perfectly!
This salad dressing is what brought the whole salad together as it was light and zesty and complimented the ingredients for the salad.
We all loved this salad! Using store bought cooked chicken makes it a little easier for the working parent and having the chicken with the bacon makes this salad a meal. The zesty salad dressing was light and having the salsa in the dressing helped reduce using the mayonnaise, if you use ranch salad dressing, I would recommend adding chopped tomatoes to the salad itself.
