I know it doesn’t sound so exciting…”bran muffins”, right? Why would Patty be doing a post on bran muffins? Here is my answer, I think bran muffins have the short end of the stick, while most people associate bran with having benefits for your digestive system, I simply think bran muffins taste really good and there is something about eating and enjoying a good bran muffin that satisfies my sweet tooth.
We used to make bran muffins at work but not to often and to be honest with you, I never found a recipe that I really loved. Trust me I’ve tried many recipes and tried creating my own bran muffin that I would love but until this recipe was developed, I had nothing to offer you.
I used the bran “Hodson Mill” for my bran muffins, the bran is a wheat bran and unprocessed and I will tell you that I loved it! I’ve tried other brands but this has been my favorite recipe using this product. I kind of started out following the directions and then ended up doing my own thing so I’m sharing my recipe.
First I put the bran in a bowl
I added 3 cups of hot water and I let it sit for about 20 minutes
after 30 minutes, I added some orange juice, orange zest and my egg
then my buttermilk and mixed well
I then creamed together my butter and brown sugar
added the bran mixture to the butter and then added the flour and baking soda
to add a little crunch, I added some sliced almonds and mixed well
I mixed it all together really well and then scooped it into my muffin tins, prepared with liners
Into the oven they went and baked for about 15 minutes
I know that bran muffins aren’t the first thing you think you are going to bake on the weekends but these bran muffins are truly amazing, slightly sweet and just delicious…not to mention that somewhere in my mind they are also healthy, lol.
