If you love roasted eggplant, onions and barley then this is the recipe for you! This is one of my most favorite recipes, especially for the summer as it compliments every meal! My barley salad is great for picnics, as a side dish for your dinner and it works great with any BBQ.
I created this recipe as a “copy cat” recipe from a local market many years ago and while I may not have had the exact ingredients or quantities, my version came out fabulous! This is a great dish as you can make it a day in advance and it will last for 3-5 days once it’s made.
Things you may want to know about barley:
- Barley is a grain
- Barley is high in fiber
- Barley has a nutty flavor when cooked and is great in soups or even, once cooked, it’s great on salads
- Barley is not a grain that is gluten free
To make my salad, first make the dressing, I used a small mason jar but you just use a bowl
cut the onion and eggplant to the same consistency
place on the baking sheet
place the eggplant and onion in the oven and cook until they look roasted 25-30 minutes
while the vegetables are roasting, put your chopped onions in with the dressing and add mustard, salt and pepper
cook the barley according to the package and chop the cherry tomatoes
chop the dill
when the vegetables are done roasting, chop them and add them to the barley, tomatoes and top it off with the chopped dill
add the dressing, toss and serve
This is one of the those keeper recipes that everyone will love! You can substitute the barley for wheat berries, I would not play around with different vegetables as the eggplant works great with the roasted onions.
