I just love banana in anything! There I said it, when I grew up my mother had a recipe I made all the time, it was a basic banana chip cookie and I swear I could bake the banana chip recipe to memory back then. I then became obsessed with banana bread and then I had to find the perfect banana bread that didn’t have as much oil. Then I experimented with nuts, I still believe that pecans bring out the best flavors in bananas. I’ve begun my search for banana cake from scratch….here is one of my first of many recipes to come.
I used to make banana cake using a store box, yes I did, I admit it 🙂 and every time I’d make that store bought banana cake mix, I’d always make my peanut butter frosting to put on top as I thought the flavors of peanut butter with banana were amazing. I’d bring it to all my social events and everyone always loved it.
Today I’m sharing a very simple cake recipe with you and it’s from scratch and I’m sure you will have most of the ingredients in your pantry, you begin by beating your butter and sugar together for about 3-5 minutes or until pale in color.
You then add your eggs, egg white, vanilla extract and oil and mix well
you then add 1/2 of your flour mixture
you then add all of your banana and milk mixture
conclude by adding the rest of your flour mixture, and beat only until all combined. Place in your baking dish
bake for 35-40 minutes…remove from the oven and cool before frosting
this recipe has a lot of banana…do you see all the banana in the photo?
Here is a cut piece after I frosted it…OMG was this cake delicious!
Even non banana lovers will like this cake. I did add coconut to my frosting, if you don’t like the coconut then you can take it out. You can also make your own favorite frosting for this recipe. I hope you enjoy this recipe as much as we did!!!!
