I just love visiting with friends and recently I had the privilege to stay at my best friends house during the summer…while I enjoyed the visit, I especially loved when Melissa shared her family favorite recipes. Melissa has shared her twice baked stuffed spaghetti squash recipe and Mark’s amazing potatoes and onions recipe with me in the past and she also shared Daisy’s (her daughter) favorite recipe for baked salmon with pesto.
This is a super easy recipe, you put some butter on your salmon filets
mix the pesto sauce and slather it on the salmon
bake and serve, I kept my salmon a little on the rare side, if you like yours cooked more just add a few minutes to the recipe instructions.
I mean come on, is this even a recipe? I loved the sauce the pesto made as it baked, the butter added flavor and a moisture to the salmon, don’t skip that part! This is a great recipe if you have someone coming over that is gluten free and can pair lovely with my quinoa with grilled vegetables recipe or a my arugula salad with feta.
