Okay so who knew that there were so many different kinds of potatoes or yams? On a field trip with my culinary class, we were able to explore different types of markets, one of which was a Chinese market. I was surprised as when we got there, I was introduced to a Chinese purple yam, I knew that I just had to try them.
I was told 2 things, 1) that Chinese Purple Yams are usually $8.00 a pound at our local farmers market and 2) that Chinese Purple Yams were very sweet and worth the $8.00 a pound. At the Chinese market, the Chinese purple yams were only $1.50 a pound so I just had to buy them.
First things first…I had to get some salt out, olive oil out and some fresh rosemary from my garden.
I chopped the rosemary, scrubbed the outside of the potatoes and added olive oil to them. I then rolled the potatoes in the rosemary and salt.
I baked them…and YUMMY! I know you will enjoy this recipe as much as I did!
