Last week I posted a recipe for my zesty lemon dressing, I received some emails from people asking what salad I would put it on and I knew right away I knew I needed to do a post about the salad.
This salad dressing would be great on any salad you choose to put it on but for the summer I tend to put the dressing on my arugula salad with feta…this salad is not just arugula with feta, but with olives, tomatoes, farro and chickpeas. This arugula salad can be adjusted to your likings and you can add almost anything you’d like to make it more mediterranean or simple.
I placed my arugula in a bowl and added chopped tomatoes
I then added kalamata olives, feta and chickpeas
add the cooked farro on top
I used my zesty salad dressing
Tossed it all together and served
What I love about this salad is everything! You can omit or add things that you do like, roasted red bell peppers are great in this salad, green olives instead of kalamata olives, if you don’t like chickpeas omit them. The other thing I love about this salad, you can serve it the next day, when the lettuce wilts down, add new arugula and serve it again. This is the perfect salad for bbq’s or picnics and great for the vegetarian as it’s a hearty salad that will please most!
