Oh my…I think I just died and went to heaven over this recipe.
As many of my followers know, I just love side dishes! I always say the more options for side dishes the better and because I make so many sides when I entertain, I usually get a few left overs which is also fabulous for me. Last year I introduced you to my Chickpea with Lemon and Parmesan which I love and I can say is a total crowd pleaser. With the summer coming our way, I wanted to be creative and make another option for me using the garbanzo beans and I have to say, I LOVE this recipe I created.
I went to my pantry and pulled out a can of garbanzo beans and a can of black beans, I then looked around and found a tomato and thought it would be lovely to add that to the mix as I thought it would make a nice light salad. I didn’t want to stick with the traditional seasonings like oil, distilled vinegar, salt and pepper. I wanted herbs, so I went outside to see what was in my garden and I picked some mint (that’s my secret ingredient), chives and parsley.
Here is what I did, I opened my can of garbanzo beans and black beans and I rinsed them, it’s very important when you are using canned products to rinse them
I put them in a bowl and tossed them
I then prepared my tomatoes, I removed only used the flesh of the tomato as I didn’t want all the juice and seeds
I chopped up the tomatoes and added them to the beans
I then added my herbs, the mint is that surprise ingredient
I then added the seasonings, tossed it all together and OMG…YUMMY!!!!!
This recipe for garbanzo beans, black beans and tomatoes is now my new favorite recipe. It’s so super easy and can be doubled very easily. It’s great for a BBQ, to bring to a friends or for your own entertaining at home.
