I was dating someone from the south who taught me a lot about southern traditional dishes and the simplicity of southern dining. He had many favorite recipes like my chicken spaghetti bake (my number one searched recipe from my blog and super yummy) but his most favorite recipe was pecan confectioners. He didn’t have the recipe so it became the running joke that they even existed as I couldn’t find a recipe for them on the internet. I just figured the cookie or nut was just a recipe that the southerns had from generations prior or they are called something else and one day maybe I’d be lucky enough to try one.
Guess what? I got the recipe for the pecan confectioners and here it is!!!! It’s super easy to make and delicious to eat!
Whip the eggs until frothy
add brown sugar, flour, vanilla extract and salt
mix well, add pecans and toss until well coated
place on a parchment lined baking sheet, the recipe called for clusters or individual, I enjoyed the individual better
bake for 30 minutes
here is a cluster I held up
once they cooled I placed them in beautiful bowl, I also made a few gifts out of them, here is one I did packaged.
I can’t really describe these cookies/candied nuts as they are not the texture of a cookie and they are not candied nuts. The egg white mixed with the brown sugar creates a texture that melts in you mouth; they are sweet and then there is the nut. This is a great recipe to keep and make for the holidays, let your guests guess what they are, or package them like I did, hand deliver to your favorite friends, as no one will be disappointed with this recipe.
Finally I will warn you, they are addicting (which is best to package them for friends, lol)…I now understand why I heard so much about them for so long. Treasure this recipe as it’s a keepsake for sure.
