My daughter’s friend, Amanda loves my chewy coconut magic bars so every time there is a party or celebration I make them for her as I know it means a lot. Last night Amanda’s mom was hosting the soccer dinner party for the girls and I realized I didn’t make the magic bars for her so I created this recipe for a flourless coconut cookie with chocolate chips for them.
I made the coconut cookies because I didn’t have graham crackers so I took coconut, chocolate chips, condensed milk and pecans (in lieu of the graham crackers), mixed it all together and baked them.
Here is how I did it, I put all my ingredients in a bowl
mixed until fully combined
using an ice cream scooper, I scooped the mixture and placed on a baking sheet
I didn’t want them to look like coconut macaroons so I flattened the mixture with my fingers
baked until lightly golden brown
and sent them off to Amanda’s house
This is probably one of the easiest recipes for cookies you will make for the holidays. The hardest part of this recipe is letting them cool completely before removing from the baking sheet and eating them. The best part is the recipe makes about 50 cookies…
Here is what I did or would change for next time:
- I made my recipe with milk chocolate/dark chocolate/white chocolate, I would add some crushed heath pieces (you can buy them in a bag)
- I would add some crushed graham crackers to mimic the coconut magic bars
- I would slightly toast the coconut before adding them to the recipe (maybe 3-5 minutes in the preheated oven)
